Dessert Bars to Please Every Taste | An Interview with Mimi’s Cookie Bar

Mimi’s Cookie Bar is an organic and all natural bakery that specializes in cookies, french macarons, pies, cakes, cupcakes, brownies and dessert. We use only organic and all natural ingredients and support fair trade and local farmers whenever possible. We also offer many vegan & gluten free options. What are some of the hottest trends you’re seeing in wedding and event cakes and desserts right now? Right now a big trend is Dessert Bars in place of a traditional wedding cake, that way guests can try a couple different items instead of all getting served the same cake. Also, French Macaons are super trendy right now and Mimi’s Cookie Bar is the only place for miles that makes them. We are adding these to dessert bars, adding them on top of cupcakes and also around cakes. You definitely want to add these one of a kind french pastries to your wedding display! And, another new trend is Pie Bars, which we also specialize in. A Pie Bar can be a perfect rustic display for a beautiful mountain wedding. Where do you draw your creative Inspiration from? We like to make things as natural and organic as possible. So I draw a lot of inspiration from outside, like using lots of textures and patterns since we don’t use any artificial colors or ingredients in our desserts. Are there any challenges you face at altitude? How do you manage them? There’s challenges at altitude that you can’t just follow any old recipe, and have it turn out right. But we create all of our own recipes from scratch anyways so it doesn’t really bother us. Whenever we’re creating something new, its a lot of trial...

Choosing Entertainment That’s Guaranteed to Please a Crowd | An Interview with String Theory

Choosing Entertainment That’s Guaranteed to Please a Crowd | An Interview with String Theory

String Theory has been playing together for 8 years: Dan Connor, Charles Broten, Greg Smith. We play steel string or nylon-strung guitars, bass, mandolin, fiddle and sing: all acoustic music. We have long experience of playing all kinds of events, including weddings. Dan and Greg both teach music in the local community. Where do you draw your creative inspiration from? We play a very wide range of music: ‘everything but heavy metal’ has been said, partly in jest… We play both originals and covers: gypsy jazz, bluegrass, country, folk, jazz, Brazilian, Celtic, classical. We can often learn a favorite song or two for a couple if we don’t know them already and they work in an acoustic setting. We are not a replacement for a D.J. or a rock band, if that’s what’s needed, but we can cover the pre-ceremony, the ceremony and the reception with powerful and appropriate music. The three of us have somewhat different tastes, but a common commitment to quality of both sound and performance. We own a sophisticated, high-fidelity PA system which can be used for the ceremony/reception as well. What’s the secret to finding the perfect event or wedding music? The perfect wedding music is the music which makes the occasion both serious and joyful. What that is is sometimes specified by the couple, but oftentimes, we will play appropriate pieces and we haven’t had a bad review yet! We have played Debussy, Bach… Grateful Dead… Johnny Cash. What are some songs or genres guaranteed to please a crowd? People seem to like variety, but it is also effective to pace the event so that it builds from...

Aside from style one of the biggest trends we are seeing is that brides are moving away from the traditional 3-tier wedding cake and opting for a spread of smaller cakes, cupcakes, and dessert bars. What do you love about being a baker? I have always had a passion for baking, there is something really soothing about spending time in the kitchen baking. But for me it is more about the creative release in the design. Creating a piece of art that one can enjoy visually as well as the taste. Are there any challenges you face at altitude? How do you manage them? There are several factors to consider when baking at altitude…oven temperature, baking time, and tweaking of ingredients. We have spent a lot of time fine tuning all of our recipes to be the best of the best! What do you...
