Mimi’s Cookie Bar is an organic and all natural bakery that specializes in cookies, french macarons, pies, cakes, cupcakes, brownies and dessert. We use only organic and all natural ingredients and support fair trade and local farmers whenever possible. We also offer many vegan & gluten free options.
What are some of the hottest trends you’re seeing in wedding and event cakes and desserts right now?
Right now a big trend is Dessert Bars in place of a traditional wedding cake, that way guests can try a couple different items instead of all getting served the same cake. Also, French Macaons are super trendy right now and Mimi’s Cookie Bar is the only place for miles that makes them. We are adding these to dessert bars, adding them on top of cupcakes and also around cakes. You definitely want to add these one of a kind french pastries to your wedding display! And, another new trend is Pie Bars, which we also specialize in. A Pie Bar can be a perfect rustic display for a beautiful mountain wedding.
Where do you draw your creative Inspiration from?
We like to make things as natural and organic as possible. So I draw a lot of inspiration from outside, like using lots of textures and patterns since we don’t use any artificial colors or ingredients in our desserts.
Are there any challenges you face at altitude? How do you manage them?
There’s challenges at altitude that you can’t just follow any old recipe, and have it turn out right. But we create all of our own recipes from scratch anyways so it doesn’t really bother us. Whenever we’re creating something new, its a lot of trial and error until we get exactly what we want.
What’s your favorite way to unwind in the mountains?
Every morning I go for an early run, when the sun is rising its the best way to start the day.
